Blue cheese stuffed burgers! A made-from-scratch burger recipe with tangy blue cheese, mustard, Worcestershire sauce, and more. This burger with blue cheese is easy to put together, and the result is melty, juicy, and so delicious!
What are blue cheese burgers?
No, they are not burgers made out of blue cheese. They are hamburgers with blue cheese mixed in with the ground beef to make an incredibly juicy and tasty patty!
There is nothing wrong with a good ol’ cheeseburger with melted American cheese on top – I could eat those and forever be happy.
But, these blue cheese stuffed burgers use tangy blue cheese crumbles to infuse the burger with melty cheese in every bite. The extra layer of flavor takes a burger to a whole new level.
What is blue cheese?
It is called blue cheese because it really does have blue marbling throughout it. The blue marbling comes from the common mold Penicillium. You’ll know it by how it smells – it has a very unique odor.
Don’t let the word “mold” intimidate you – it’s actually perfectly safe to eat.
Blue cheese burger ingredients
You actually don’t need much to make some juicy burgers. I think keeping it as simple as possible with a few spices is all it takes!
Here’s what I used to make tangy burgers:
- Ground chuck
- Blue cheese crumbles
- Worcestershire sauce
- Dijon mustard
- Garlic powder
- Salt and pepper
Best kind of ground beef for burgers
Lean beef is great, but not so much for making burgers. You’ll want some good fat content to keep the burger juicy and flavorful. I recommend using ground chuck which has an 80/20% lean-to-fat content!
Why add blue cheese to hamburger meat?
This is definitely a unique combination, I will admit! Blue cheese has a very unique flavor profile. I love how the earthy flavors from the cheese mix with the other ingredients in the burgers.
This burger isn’t for everyone, but if you love blue cheese then you will adore how this turns out! As the blue cheese melts, it makes the ground beef around it juicier too.
You don’t need to add extra cheese to it, the cheese cooks within the meat!
Making burger patties
- Mix all the blue cheese burger ingredients together in a bowl. Do not overwork the meat – this can result in them falling apart and becoming tough when cooked.
- Once combined, divide the meat into four sections and then proceed to form a patty.
Burger tip:
Make sure your patties are flat when forming or else they will turn into tennis balls and puff up when cooking on the grill.
You can gently push your thumb into the middle to help with this.
How to prep your grill
Before you cook the burgers on your grill, you should make sure it is ready. Do this by pre-cleaning it, even if you think you already cleaned it.
Scrub your grill to get any bits/residue leftover from your last grilled meal. We were gifted a tool called the Grill Daddy, which uses steam to clean and scrub the grill. We love it!
After you clean it, you also need to oil the grates. This will make sure the burgers don’t stick to them. You can do this by dipping a paper towel in some oil and just rubbing the grates you’ll be using.
How to grill blue cheese burgers
Grill time will depend on your preference, size, and shape of the burgers. The best way to ensure you’re achieving the correct temperature is with a meat thermometer.
These are the temperatures to cook the meat to in order to reach your desired burger done-ness level.
- Medium Rare: 130-135 degrees F, about 4 min per side
- Medium: 140-145 degrees F, about 5 min per side
- Medium Well: 150-155 degrees F, about 6 min per side
- Well Done: 160+ degrees F, about 7+ min per side
Grilling tip:
When grilling the burgers, do not press them down with the spatula because this will release all the delicious juices.
After you flip the burgers, you can toast your hamburger buns for a minute or two. I am partial to sesame seed buns, they are my favorite!
Best toppings for blue cheese burgers
Remove your hamburger from the grill and add your favorite toppings! I added my pickled red onions, and they complimented the burger so nicely.

Ingredients
Blue cheese burgers
- 1 1/2 pounds ground chuck (80%/20% lean-to-fat)
- 1/3 cup blue cheese crumbles
- 1 tablespoon reduced sodium Worcestershire sauce
- 1 tablespoon dijon mustard
- 1/4 teaspoon kosher salt
- 1/2 teaspoon fresh ground black pepper
- 4 burger buns
Optional toppings:
- Pickled Red Onions
- Lettuce
- Tomato slices

Instructions
- In a large bowl mix together the ground chuck, blue cheese, Worcestershire sauce, dijon mustard, salt, and pepper. Careful not to overwork the meat. Divide the meat into four equal parts and form into 3/4 inch patties, press your thumb gently into the middle so they don’t ball up when cooking.
- On a cleaned/oiled grill, heat to high (400 degrees F). Once heated, place burgers onto direct heat and cook until desired temperature using a meat thermometer.
- After you have flipped the burgers, you can toast the buns on the grill. Place on indirect heat for a minute or until toasted to your liking.
- Remove buns and burgers from the grill. Top with your favorite toppings and enjoy!
