Chorizo is a pork sausage that is cured and smoked in a specific way.
There are two different types of chorizo.
Chorizo (Mexican) is raw/uncooked and is best used in dishes crumbled. Like in my queso fundido recipe.
Chorizo or Chouriço (Portuguese/Spanish) is a smoked par-cooked pork sausage seasoned with hot paprika and spices. Like in my clams and chorizo recipe.
