Broil poblano pepper in oven for 10 minutes, until charred. Cover with foil and allow to steam.

Peel skin of poblano pepper and remove seeds. Then dice the pepper.

Peel and dice white onion

Freshly grate Oaxaca cheese. Pre-shredded cheese has anti-caking agents that affect taste & texture when melted.

For this queso fundido, use Mexican chorizo. Fully brown chorizo in a skillet, then remove & set aside.

Add avocado oil and sauté roasted poblano peppers and diced white onion.

Turn heat off and add half of the shredded cheese. Spread on top the chorizo, pepper, onion mixture, then rest of cheese.

Bake queso fundido in oven at 400F for 8-10 minutes until cheese is browned and bubbling.

Serve queso fundido right away garnished with cilantro & diced tomatoes, with tortillas & chips.
